Happy 4th of July!

Happy 4th July everybody!!! This is for you!!! In case you didn't notice, I really like to cook. So if you ever can't find me, look in a kitchen. Any kitchen. Even a makeshift one. Because if I'm not working, learning, or teaching, that's where I'll probably be.

Ever since I can remember I have loved being in the kitchen. It's a place of connection and exchange. A place where you can have the deepest conversations, the longest and loudest laughs, the quietest moments of thought and concentration. A place you can constantly create and bring together the simplest and most beautiful of flavours.

Flavours that pop.

Food that makes people happy.

Tastes and textures that make you smile on the inside.

With every bite.

Here is my latest creation:

Almond genoise cake with strawberry consomme filled with basil and cardamom white chocolate ganaches decorated with a toasted coconut white chocolate Italian meringue buttercream and topped with strawberries, cherries, blueberries, raspberries, blackberries, edible gold dust, cardamom white chocolate ganache, freeze-dried strawberries and toasted coconut white chocolate truffles in strawberry dust...

That was a mouthful!!!
